A Whole Balanced Meal of Lentil Curry Okra Fry White Rice

I have decided to make something really quickly not only just to feed my hungry stomach but also to stay and give my family the best food after all it all means well that we cook sometimes and nourish our members with loving care.
Like a storm entered the kitchen and ensured I get a four square meal right. White rice which is fuss free in a pressure cooker can be done simply well. What you need for the same to be cooked to perfection is a small cup of white basmati rice and we always consume any highly graded basmati option that suits our stomach and budget friendly too. Take that and nicely rinse it under tap water and let it be rinsed for a few times before just chucking it into the pressure cooker. Now to that, add two cups of water at normal room temperature. Put it on the gas, ignite the flame and turn it on medium. After a whistle or so rice is fully done and awaits your hungry tummy for sure.
The next is a protein which is a good thick lentil curry. I used the red lentils here in this case and it is also quickly made fuss free in another pressure cooker. I ensure I have some of these Indian pressure cookers handy even the one pot meals are done simply without much time consumption and a busy mother of two without a single nanny or help needs all done for her family to perfection. So now what I do is under running tap water clean a bowl full of red lentils well and tip it into the pressure cooker with enough water measuring it with the same cup about three times of water for lentils that is just one cup. You can later add more water once its done fully well checking for consistency for it does require more water as lentils always tend to thicken a lot because it is glutenous in nature generally. Add salt as per your taste and a pinch of turmeric, some green slit chilies or loosely cut them into halves and add them into the dish. Also add one tomato cut into thick chunks and pressure cook them all for three whistles. Make sure you check for consistency at this point. Open the lid of the pressure cooker and let it be on low flame and as it keeps boiling away add a little more warm water, only if required. I usually add half a cup more and that is just the right consistency for my family and it makes for a good yummy meal together with the rice and okra fry and fried eggs. I give it all a mix and alongside add bit of mustard oil in another wok for frying the spices to be tipped later into this yummy curry. I add about one fourth of a teaspoon of mustard seeds into the oil and a squeeze or two of asafetida and a sprig of curry leaves. Once it crackles and splutters and the aroma is essentially an important reminder for it is now done enough to be poured into the liquid broth like lentil soup. At this point check for consistency and additional salt if required add a little more for good taste. need more salt feel free to add a little now into the curry and mix the spices all well. Now this lentil curry is perfectly done and ready for it to be served alongside other preparations.
Next comes the okra fry. We need diced okra and it takes subtle amount of time to get them all chunky and cut into bite size pieces. About ten minutes of total chopping time overall means a good okra evenly cut turns into a nice vegetable that adds enough vitamins to the meal that we need to consume for wellness and optimum amount of nutritional value. Get the wok out and warm up enough mustard oil into it. Once it is hot, tip in all the okra pieces and slices of it. I do nothing but to the okra add enough amount of salt for taste and a teaspoon of turmeric powder. Fry them nicely until they are perfectly done. Use medium heat for frying and you can do other duties while the frying job is done to perfection. Make sure you put a lid on it and towards the end of the frying process which takes about seven or roughly eight odd minutes if the okra is tender and fresh add a few more to it and make it ten minutes while you lower the gas and put a lid on and let it be cooked gradually for nice juicy okra means a little simmer and lid needs to be on for some time as well and the job is now done.
Last but never ever the least is one more protein dish that keeps us active and on our toes during such busy laborious times. A nurturing mother and her family is well taken care of with a mix of carbohydrate, protein and a vegetable accompaniment that ensures good nutrition keeping a host of people nice and warm and smiling bright as they enjoy a simple meal nicely done freshly cooked.
Well this one is a no brainer a fried egg poach that goes with almost anything. A lack of a non vegetarian item makes up for this easily and here we go.In a warmed up wok add enough olive oil and just when its warmed up right crack two eggs and pour them in one by one and just flavor them well with enough salt and pepper. I used rock salt for added nutritional value to the dish and it makes up for great fried egg option on a busy day such as this. into it the eggs cracked one by one. Once done let it be cooked for few minutes taking its own time to become evenly cooked through. Leave it on for a few additional minutes on the flame just to ensure its nicely cooked through and at this point plate it up alongside other dishes.
Presenting you a very quick meal that can be eaten with anything even chapatis and your life seem sorted for a while for sure.
